Bootie (endearment) when did I have my first meeting with you?
You remember I use to make it when you were little.
Pronounced ba-bòor-tea, this much-loved South African dish is a delicious mixture of curried meat and fruit with a creamy golden topping, not to dissimilar to moussaka.
The 'Obroni' consider this the national dish of South Africa, there is no need to get into debate here, not today! Bobotie is a fantastic mix of flavours, with fruit, curry and spice in a comforting meaty bake, finished off with a custard-like topping. It's one easy, inexpensive delicious meal that children will ask for more than one serve or when you are going to make it again.

Bobotie, at times this dish is accompanied with yellow rice and sweet condiments including coconut, fruit chutney and or chilly condiments.

INGREDIENTS

❂❂ Filling ❂❂
1 kg minced lean beef
2 onions, chopped nice 'n' small
25g or more butter
2 teaspoons garlic cloves, crushed
1 teaspoon grated ginger root
2 tbsp Madras curry paste
➲ (curry powder) or others paste does wonders on a budget
4 teaspoons of tomato paste
➲ optional
2 tsp dried mixed herbs
5 cloves garlic
5 allspice berries

2 tbsp peach or mango chutney
➲ (apricot jam) or others does wonders on a budget
1 zest and juice of medium lemon or lime, divided
➲ optional
½ juice of lemon
Salt and pepper
½ cup sultanas
6 bay leaves
½ cup of slivered almonds
➲ optional or your favourite nuts

450ml full-cream milk
3 large eggs

Get down & dirty :
Preparation
❂❂ Filling ❂❂
➊ Heat oven to 180C/fan 160C/gas 4.
➠ Pour cold water over the bread and set aside to soak. Meanwhile, fry the onions in the butter, stirring regularly for 10 mins until they are soft and starting to colour.
➋ Add the garlic and beef and stir well, crushing the mince into fine grains until it changes colour.
➌ Stir in the curry paste, herbs, spices, chutney, sultanas and 2 of the bay leaves with 1 tsp salt and plenty of ground black pepper. Keep on crushing!
➍ Cover and simmer for 10 mins. Squeeze the water from the bread, then beat or continue crushing it into the meat mixture until well blended.
➎ Tip into an oval ovenproof dish (23 x 33cm and about 5-6cm deep). Press the mixture down well and smooth the top.
➲ You can make this and chill 1 day ahead.
❂❂ Topping ❂❂
➏ For the topping, beat the milk and eggs with seasoning, then pour over the meat.
➐ Top with the remaining bay leaves and bake for 35-40 mins until the topping is set and starting to turn golden.
➑ Serve with your favourite accompaniment (rice, potato comfort for Winter or with a garden salad in the Summertime, fresh!

Hangry? Soo hungry that you're angry. My first born who now towers above me seems to be in a constant of this state from then and now. This is him in the kitchen of Ezykaya, Mpumalanga 2009 we prepared a lot of South African food with the watchful eye of the Shangaans and Zulu people. This ventured into catching and cooking the Mopani Worms. A story for another day.
